From Molasses and Grain to Bottle
At Ferreira Post Distilleries, every bottle is a labour of love — shaped by precision, patience, and passion. Whether crafting rum or gin, our process reflects our respect for raw ingredients, modern distillation, and the unique coastal environment of Jeffreys Bay.
- The Finest Ingredients
Quality spirits begin with quality inputs.
For Rum:
We start with premium bakery and confectionary-grade molasses sourced from trusted South African producers, including the lush growing regions of KwaZulu-Natal. This rich molasses forms the backbone of our rum, delivering depth and character.

For Gin:
Our gin journey begins with a high-quality neutral spirit, distilled in-house from fermented agricultural raw materials. To this, we add carefully selected botanicals, including juniper berries and complementary herbs, spices, fruits, and indigenous botanicals that reflect our coastal heritage.

All our spirits are produced using clean, filtered water — including natural rainwater and reverse osmosis water — to ensure purity and consistency.
- Fermentation: Creating the Alcohol Base
Rum Fermentation:
Molasses is diluted, balanced, and fermented using imported yeast strains and carefully dosed nutrients. Fermentation is closely monitored for temperature, pH, specific gravity, BRIX, and alcohol development over several days. This stage transforms sugar into alcohol and lays the foundation for the rum’s flavour profile.

Gin Base Fermentation:
For gin, fermentation focuses on producing a clean, neutral alcohol base. Precision and control are paramount, ensuring minimal congeners so the botanicals can shine during distillation.
- Distillation: Precision and Purity

Our commitment to quality is reflected in our modern reflux column distillation system.
For Both Rum and Gin Base Spirit:
• A ten-bubble plate reflux column is used for the stripping run to concentrate alcohol and remove unwanted compounds.
• A second distillation in an eight-bubble plate reflux column refines the spirit, producing a clean, smooth, and consistent alcohol base.

Distillation is conducted slowly and with care, allowing us to make precise cuts and preserve desired characteristics.
- Gin Botanical Distillation: Where Gin Is Born
Once a neutral base spirit is prepared, the gin-making process truly begins.
- Selected botanicals are either macerated in the spiritor introduced via vapour infusion, depending on the desired flavour profile.
• During redistillation, alcohol vapours extract essential oils and aromatic compounds from the botanicals.
• Each botanical recipe is carefully balanced to achieve harmony between juniper, citrus, spice, floral, and indigenous notes.
This step transforms neutral spirit into a distinctive gin with clarity, freshness, and depth.
- Aging: Time and Oak (Rum Only)

For our aged rums:
• The distillate is reduced to barrel strength using reverse osmosis water.
• Rum is matured in second-fill bourbon casks, allowing gentle interaction with oak.
• Over time, the spirit develops complexity with notes of vanilla, caramel, oak, pawpaw, and soft tannins.
• Barrels are monitored regularly to track maturation and flavour development.
Gin, by contrast, is typically not aged, preserving its bright botanical character.

The cool coastal climate, fresh sea air, and rhythmic influence of the waves subtly shape our spirits, adding a sense of place that cannot be replicated elsewhere.

- Blending, Reduction, and Bottling
Before bottling:
• Spirits are blended where required to achieve consistency and balance.
• Alcohol is reduced to final bottling strength using purified water.
• Bottles are cleaned, filled, sealed, and labelled under strict hygienic conditions.
• Where applicable, approved natural flavourants and colourants are added in full compliance with South African regulations.
